Bomb-ass Bean Burritos by Colleen Guenther

These burritos are amazing! Super simple but ultra delicious.

What you Need to make 2 large burritos:
1 can of pinto beans
1/2 cup shredded Mexican cheese
1 large dollop of sour cream
1/2 cup of jarred salsa
generous sprinkle of salt
generous sprinkle of chili powder
generous sprinkle of cumin
generous sprinkle of taco seasoning
sprinkle of chipotle powder
sprinkle of Mexican oregano (if you have it)
1 finely diced jalapeno
1/2 chopped onion (I like red)
1 handful of chopped parsley
a dash of water

Mix everything together in put in a small baking dish, cover with tin foil, and bake at 355degrees for 35 minutes.
When done, take out and take lid off. Let sit for a couple of minutes.
Warm up a large tortilla, we use wraps,  until a bit crispy and browned.
When browned, scoop the filling mixture on top of the entire tortilla. roll up and serve with salsa or any other topping of your dreams.
