Asian Crunch Salad by Colleen Guenther

I was in the mood for a healthy salad but wanted mega flavor! Rice Vinegar, Soy Sauce, freshly grated ginger and jalapeños definitely bring that punch! It's the kind of flavoring that brings you back wanting more. I'm definitely a salty gal, not in attitude most of the time;), and really prefer it over sweet. Some of you may gasp at that fact, but it's true. So, if you are craving an easy, salty, crunchy, tasty salad that only take 15 minutes to make, this is it! Sometimes you just need to keep it simple!

What you need:

Dressing:
5 TBS natural rice vinegar (get the kind without the high fructose)
4 TSP soy sauce (feel free to use the less sodium kind)
1/4 TSP grated ginger
1 grated jalapeño
1 shaved carrot

Salad:
1 head of napa cabbage
1/2 red pepper chopped
Edamame's is you feel so inclined

Directions:

Mix your dressing ingredients and then mix your salad. Top with cracked pepper. Yup, that's it!
