Taco Casserole by Colleen Guenther

Forget about the long introduction, the title says it all. Mix a bunch of stuff up, throw it in the oven and dive in. A Minnesota tradition - be a part of it.

What you need:
1 Can of black beans (drained)
1/2 large white onion
1 handful of chopped cilantro
2 Roma tomatoes chopped
1 small red pepper chopped
1/2 jalapeno minced with seeds
3/4 tablespoon cumin
1 Good sprinkle of Mexican Oregano
1/2 cup salsa
2 cloves garlic minced
1 teaspoon chili powder
Salt and pepper

Directions:

Mix all of the veggies and spices (without the beans and cheese in a bowl). In a casserole dish, pour in your beans. Top with your fresh veggie mixture. Bake on 475 for 30 minutes with tinfoil on it. Then, top with the cheese and bake for another 10 minutes. Serve and eat however you like. Chips seem to be the ticket.
