Bean Tomato Salad by Colleen Guenther

I went to Tao Foods today for lunch and it was good, but not super good. I usually enjoy every moment and bite there, but today was different. Why you ask? I ordered the "spicy" burrito, for the first time, and once I took the first bite, I asked myself, "what about this says spicy"? I politely asked the chef if I could get more spice and she chopped up a bit more jalapeno and sprinkled it into my burrito. Still, no spark. Is it possible that some jalapenos just have no spunk? Leaving Tao disappointed, for the first time, I was still craving hot and spicy so I decided to whip up a extra spicy black bean salsa. You can top this on nachos, eat alone, or put on a salad. It is delish!

What you need:
1 can organic black beans (rinsed and drained)
2 thinly chopped scallions
2 garlic minced
1/4-1/2 chopped red pepper
2 roma tomatoes chopped
1 tsp cumin
1 squeeze lime
Handful of chopped cilantro
1/4 chili powder
1/2 tsp mexican oregano
1/2 jalapeno (minced seeds and all). Add more jalapeno for HOT HOT
Queso Fresco (fresh Mexican Cheese)
Salt and pepper to taste
