Quinoa Sprout Avocado Salad by Colleen Guenther

This is a pretty delicious and healthy dish that may not please all. I loved it but my husband said it was "revolting" (don't worry, he was kidding, partially). If he didn't like it, I pretty darn sure my 15-year-old step-daughter will not like it either. Well, I guess that means that there is more for me:) I think the part he did not like was the radish sprouts as they are pretty strong in taste. I love radishes!!

For this quinoa recipe, I decided to buy red quinoa which I like a lot. It reminds me of wild rice which I do not make nearly as often as I should. Reminds me of my mom because she is also a HUGE fan of wild rice..... I wonder if the quinoa would taste good with a dollop of plain 'ol butter just like it does..... hmmmm.... stay tuned. I made enough quinoa to feed an army so maybe I'll serve that to these picky eaters in the house;)

What you need:
Red Quinoa - make as much as you need 
Radish Sprouts
1 Avocado - diced 
1/2 teaspoon of Chili Powder
Fresh Squeezed Lime Juice
Pinch of Salt

Directions:

Cook your quinoa, while doing so, add 1/4 teaspoon of the chili powder to the water. In a separate dish, squeeze your lime juice (as much as you would think you would need) and add the other half of the chili powder. Then add your avocado and some sprouts to the lime mix along with a tad bit of salt (if you even need salt). When quinoa is done, fluff and put it in or on your serving dish. Top with your sprout/avocado mix and pour a little more lime juice, from the mix, onto the quinoa. I hope you don't think it is as revolting as my husband does, but really, you can't buy taste;)
