Quorn Chicken Quesadillas by Colleen Guenther

Hey, this one is simple but so delicious. Perfect for a quick lunch or dinner.

What you need for 2 servings:
-2 Quorn Spicy Chicken Patties (if you have not had them, they are fucking awesome).
-Finely sliced red cabbage
-Finely diced red or white onion
-Finely chopped jalapeno
-handful of chopped cilantro
-shredded cheese of your desire - I used a Mexican blend
-Avocado
-Salsa
-Hot sauce
-Lime

Bake up (or toast up) a Quorn Spicy Chicken Patty. I've found that toasting them in the toaster two like 3 times works just as great as baking them. Less of a hassle too. While cooking, mix up the red cabbage, onion, jalapeƱo and cilantro. Once the patties are cooked and crispy, chopped them up finely. Then, lightly butter a flour tortilla (we love the Sonoma wrap tortillas) and place in a fry pan and one side, place the chopped patties and shredded cheese. Let the cheese melt. Then once the bottom is browned, transfer to a plate. Add a squeeze of lime, hot sauce (we love Cry Baby Craigs) then the cabbage mixture. Fold over the empty tortilla onto the filled side. Top with avocado and salsa. Enjoy!

Oh, side tip, sometimes I add a dollop of sour cream to the cabbage mixture and some Mexican spices to add a lil sumptin' but totally not needed.
