Vegan Mexican/Korean Tofu Tacos by Colleen Guenther

What you Need (to make tacos for two people - double if there are more):

For the Tofu:
Take 1/2 a block of Extra Firm Tofu
Crumble it into a bowl
Add, 1 TBSP of Soy sauce
Dash of Paprika
Dash of Cumin
Triple dash of Chili powder
Dash of Onion Powder

Mix all together and spread out the mixture on a baking sheet lined with parchment paper.
Bake at 375 degrees for 20-30 minutes while tossing in the middle. Watch it close after 20 minutes so that you don't burn it. You want it kind of crunchy but not totally dried out.

Toppings:
Butter Lettuce Salad
Avocado
Salsa

Dressing for the Butter Lettuce (This dressing just makes a great salad dressing too!)
Splash of Rice Wine Vinegar
Splash of Soy Sauce
Splash of ginger juice
Dash of Sesame Oil
Splash of lime

Heat up a Flour tortilla, put your baked tofu mixture on the tortilla, top with the dressed butter lettuce, avocado and salsa.
