Caramelized Onion and Goat Cheese Mashed Potatoes by Colleen Guenther

Looking for a delicious spin on the average mash? You've just lucked out because this is the creamiest mash that I have tasted to date. The caramelized onion adds to it's robust flavor and the goat cheese makes them velvety. No, this is not a fat free recipe but who cares.... life is short people!

What you need:
1 bag of fingerling or baby red potatoes (cut in half with peel left on)
1 medium red onion chopped
1/4 cup half and half
1/2 milk
1/4 premium goat cheese
1 TBS butter
1 TBS extra virgin olive oil
handful of chopped parsley
Dash of salt and pepper

Directions:

Boil your potatoes for 25 or so minutes until soft. While those are cooking, caramelize your onions by putting them in a pan with your butter and oil and cooking on med-low heat for about the same amount of time as the potatoes. Be sure to continuously stir them while they cook. When both are done, drain your potatoes and mash them up in pan they were cooking in. Add your milk, cream, and goat cheese. Then add your caramelized onions and stir until they are really creamy. Add salt and pepper to taste and top with a sprinkle of fresh chopped parsley.
