Butter Bean taster by Colleen Guenther

This is a little something to start your dinner off right. You don't eat it by the spoonfuls just a little nibble here and there:) Perfect start!

What you need:
1 can Butter beans rinsed and drained
1/2 red pepper finely minced
1 carrot finely minced
1 small garlic minced
2 TBS apple cider vinegar
1 TBS Extra Virgin Olive Oil
1 TBS chopped parsley
salt and pepper to taste

Directions:

Mix all of your ingredients and let chill for a couple hours before serving. Goes great along side your main dish!
