Potato Black Bean Chipotle Patties by Colleen Guenther

These are packed with Unbelievable flavor! I never knew canned chipotle peppers could prove so amazing! I could eat these every day...Seriously.

What you need:
1 bag of fingerling potatoes (10-12 small potatoes)
1 can of black beans rinsed
2 garlic minced
1 tsp fresh chopped parsley
3/4 tsp cumin
2-3 chopped chipotle peppers from the can (to taste)
1/2 tsp mexican cilantro
1 egg
Salt and pepper to taste

Topping:
3 tbs Mayo
2 tsp chipotle sauce from can

Directions:

Boil potatoes until soft (15-20 minutes). When done, drain and mash. Add all of the other ingredients and stir together. Spoon large portions onto a greased baking sheet and bake for 15 minutes at 357 for 20 minutes. Take out and place in oiled sauce pan and sautee for 10-15 minutes on each side. Place finished patties on plate and top with the mayo. Delicious!
