Spicy Glass Noodle Salad by Colleen Guenther

This spicy robust dish is not for the faint of heart. It's addictive, delicious and has a very yummy taste! I could even eat the salad with the dressing alone as the noodles are simply for extra fluff.... Try it.

Dressing:
2tbs lime juice
3 tsp Golden Mountain Seasoning Sauce (preferred) or 2 tsp soy sauce
1 tsp honey
dash of sesame oil (less than 1/4 tsp)
1 tsp ginger grated

Salad:
1 carrot match-sticked very thinly
1 handful of snap peas match-sticked very thinly
1/4 red pepper match-sticked very thinly
1 handful of cilantro chopped
1 jalapeno or fresno pepper chopped seeds kept in
4 scallions chopped
1 handful of mung bean sprouts

Noodles:
1.875 of Cellophane noodles (or half of a 3.75oz package)

Extra:
Toasted Sesame Seeds

Directions:

Mix all of your dressing ingredients and set aside. Then in a larger bowl, mix all of your salad ingredients. When that is done, cook your cellophane noodles by following the directions on the package. When done, mix your salad, dressing and noodles all together in a big bowl. Top with roasted sesame seeds and serve.
