Tiny Twice Baked Potatoes by Colleen Guenther

This is a perfect side dish to any meal. They are salty, buttery and just down right delicious. Easy too!

What you need:
1 bag of fingerling potatoes
Olive Oil
Salt and Pepper
Parsley chopped
Mozzarella Cheese


Boil you potatoes until they are soft 25-30 minutes. Drain, then place each on individually on a baking sheet. Gently and partially smash each one. Drive a tad of olive oil over them, the top each one with a tad of butter, a small square of mozzarella cheese, salt, pepper and parsley. Then, bake on 375 for 15-20 minutes until the cheese has melted. Enjoy!
