Southwestern Pepper and Egg Breakfast by Colleen Guenther

The Guenther family decided to go south of the border for breakfast this morning due to the heat wave that we are having in Minneapolis today. I mean 30 degrees guarantees that we will start seeing shorts and tank tops when out and about today. I kid you not. Anyways, I decided that this was what we were going to have when I woke up dreaming of the cajun breakfast that I had at the The Uptowner Cafe on Grand in St. Paul. Now, I'm not sure what they put in theirs, because it is hands down the best ever... but this one may come in a close second;)

What you need:
Hashbrowns
Green peppers (chopped)
White onion (chopped)
Eggs
Hollandaise (I buy the McCormicks prepackaged hollandaise which is awesome!)
Paprika
Cajun seasoning (there are many great recipes online to make your own)


Cook your hash browns (you can buy the prepackaged kind or make your own). I generally make my own and the trick is to shred your potatoes and RINSE them before putting them in a pan with olive oil, butter, salt and pepper. If your not so inspired, I like the southern flavor Simply Potato Hashbrowns. Then in a separate pan, sautee your onion and peppers in a tad bit of olive oil. While that is cooking, make your hollandaise and eggs. As you can imagine, timing is of the essence here and you will need to imagine how long everything generally takes to get this right. Once every thing is complete, assemble by putting a layer or your onions and peppers on a plate followed by your hashbrowns, egg(s) and hollandaise. To top it all off, sprinkle with some cajun seasoning and paprika.
