Cucumber Carrot Salad by Colleen Guenther

This is one of the easiest, freshest, yummiest salads that you can make any time of year. What you need:

6 mini cucumbers (they need to be the little ones) that come in a 6 pack - Cool Cukes is the brand I prefer. They are perfectly firm.
4 Carrots (peeled)
3 limes
Salt
Chili Powder

Directions:

Cut the ends off of the carrots and cucumbers and slice them (lengthwise). Put them in a glass bowl and add a couple pinches of salt. Let the salt sit on the veggies for 5 minutes before adding the lime juice. This allows the veggies to expel some of their juices. After 5 minutes, squeeze 2-3 limes over the vegetables and dash some chili pepper on top of that. Give it a little mix with the 'ol fingers and VOILA, a WONDERFUL snack or side to a meal.

If you like spicy things, you can also add a couple of chopped jalapeno and/or radish. You could also add a little hikima if you feel so inspired. All could add an extra "kick" to this already amazing side.

When it's all gone, even the juice is pretty! It's not always about the food folks, it's about the beauty of it too.
