Apple Beet Micro Green Salad by Colleen Guenther

It is, again, not a surprise of what I am about to say... THIS is the best salad ever.... Well, I do like many others too, so I will revise and say that this is the BEST BEET salad ever! I've made it several different ways over the years but this recipe takes the cake. However, I generally don't like to mix fruits with other non-fruits but this recipe may get me exploring other trifecta combos. The micro greens also add another layer of complexity as I doused it with fresh lemon juice, and the goat cheese adds a velvety texture. That combo in conjunction with the sweetness of the Pink Lady completes it's deliciousness. MMMMMMMM......

What you need:
2 beets (try different colors and varieties) diced
1 Pink Lady apple sliced or diced
2 tbs goat cheese
Micro greens
Fresh squeezed lemon juice



Take your beets and cut off the top. Place in a 8X8 glass casserole dish with a 1/4 inch of water (place beet cut side down). Cover with tinfoil. Bake at 350 for 45 minutes. When done, cool for 5 minutes, peel and dice and place in a bowl. Add and mix in your goat cheese and let it melt. On a plate, place a handful of micro greens and squeeze your fresh lemon juice over it. Top with a spoonful of the beet mixture and apple. It's that simple.
